Meat is a crucial source of protein in almost any diet, which is why we’ve put together a few healthy recipes with meat. Still, sometimes we coat the meat in batter or lather it in fat, making it pretty unhealthy. Below, we’ll show you how to make a few healthy recipes with meat.

Healthy recipes with meat: chicken and vegetable skewers

Ingredients for two servings:

  • 1 chicken breast
  • 1 zucchini
  • 2 tomatoes
  • 1 red pepper
  • 1 green pepper
  • Extra virgin olive oil
  • Salt
  • Oregano

Preparation:

Firstly, dice the chicken and add salt and oregano and set aside on a plate. Then, wash and chop the zucchini, tomato, red pepper, and green pepper. Make sure to cut them in a size that’s suitable for skewers, as you’ll need to thread them.

Once you’ve chopped all of the ingredients, thread them on to the skewer. Then, alternate the chicken with the different vegetables. Heat the griddle or pan and add a little olive oil. Then, over a medium heat, cook the skewers and turn them every two or three minutes so that they cook on all sides.

Just like that, you have a healthy recipe with meat, that’s perfect to eat with a salad or as a complete and healthy meal. In addition, it’s a different way of eating meat and vegetables and little ones will love it because of its unique presentation.

Rabbit with onions and carrots

Ingredients for two servings:

  • A tablespoon of cornstarch

Preparation:

Firstly, heat a little olive oil in a pan. Then, put a pinch of salt and oregano on the rabbit. Cook the rabbit over a low heat and, when ready, remove from heat and set aside. The oil will serve as the base for the stew. Then, in the same pan, add the sliced onion and carrots. Let the mixture cook gradually, over a low heat, while stirring often.

Once both ingredients are cooked, add the water and wine. Finally, add the rabbit and cook covered over a low heat, so that the liquid is absorbed. If you’d prefer a thick sauce, add a tablespoon of cornstarch, two minutes before turning off the heat. Another option is to sprinkle on paprika to give the recipe color and make it more appealing.

Preparation:

Our last example of healthy recipes with meat is this delicious mushroom-stuffed pork tenderloin. Firstly, heat a pan over a high heat with a little oil. Once the oil is hot, add the mushrooms. Once they’re cooked, put them on a plate and set aside for later.

Now, you can start to prepare the tenderloin. If it’s too thick, extend it and flatten it out by using a roller. Once it’s extended, you can start stuffing it. Firstly, put the slices of ham, followed by the mushrooms inside the tenderloin. Finally, add a sprinkle of grated cheese or put slices of your favorite cheese inside too. Your best bet is to choose a cheese that melts. If you don’t like cheese, you can use cream instead. You should add the cream to the mushrooms when they’re in the pan.

Now comes the most complicated part of the recipe. We recommend that you do this slowly and that someone helps you, if possible. Roll the tenderloin slowly. It’s important to roll it tightly so that the filling doesn’t fall out later. Also, it will be easier to eat. Then, tie it up with cooking thread to make sure it stays in perfect shape during cooking.

Once tied, brown it on each side, in the pan. Then, put it in a preheated oven at 400 degrees F. Finally, the tenderloin should be in the oven for about half an hour, although it will depend on its size.
