Pumpkin cream

Out of all the recipes that include pumpkins, soups and creams are the most popular. This dish is mostly consumed during the fall and winter since these are the seasons for harvesting pumpkins. We’ll now show you  how to prepare a delicious pumpkin cream for four people:

Ingredients:

  • 1 and 3/4 pounds of pumpkin
  • 3/4 pounds of potatoes
  • 4 carrots
  • 1 leek
  • Olive oil
  • Salt

Preparation:

Start by h eating up a large pot containing 10 and a half cups of water. While it begins to boil, peel the pumpkin and cut it into cubes. It’s better if the pieces aren’t too large so that it can cook faster.

Peel and dice the potatoes, the leek, and carrots into small pieces. When the water is boiling, add all the vegetables together with a little oil and a pinch of salt. Keep boiling over medium heat and let it cook for half an hour.

When the 30 minutes have passed, check that all the ingredients are well cooked. It’s time to liquify them. Finally, if you want the presentation to be more eye-catching, you can sprinkle seeds, fried onions, or simply decorate it with a sprig of parsley.

Pumpkin walnut cake

The best thing about pumpkins is that they’re a perfect ingredient for both sweet and salty dishes. Its texture allows us to easily make pumpkin cakes, muffins, bread, or donuts. We suggest this delicious pumpkin and walnut cake that you can prepare during the weekend so that you can have a little slice for breakfast every day before going to work.

Ingredients:

  • One pumpkin
  • Half a cup of flour
  • Half a cup of sugar (can also be substituted with a sugar-free sweetener)
  • A packet of yeast
  • 3 eggs
  • A cup of olive oil
  • A dozen nuts

Preparation:

First, cut the pumpkin into cubes and boil it until it’s fully cooked. It will take around 20 minutes, so if you are in a hurry, it’s preferable to cook it beforehand.

Meanwhile, beat the eggs in a bowl and mix them with the sugar and oil. Add the cooked pumpkin, which you will have previously crushed with a fork. Then introduce the flour and the yeast packet. Mix well to create a uniform dough.

Once the dough is homogeneous, add half of the nuts. Blend and pour in a mold that’s suitable for oven use. Then, add the remaining half of the nuts. It’s better to do this twice, otherwise, the nuts will all remain at the bottom or on the surface; this way, we manage to distribute them. According to your taste, you can keep the nuts whole or cut them into small pieces.

Lastly, place it in the oven, which should be at a temperature of 356° F. After 40 minutes, the cake will be ready and you’ll only have to wait for it to cool down before serving.

Pumpkin garnish

Besides enjoying pumpkin as a first course, the main meal or a dessert, pumpkin has even more possibilities. One of these is as a side dish or as a complement to the main course. Whether accompanying meat or fish, a pumpkin garnish is perfect.

Ingredients:

  • 1 pound of pumpkin
  • Olive oil
  • Water
  • Salt
  • Aromatic herbs

Preparation:

Start by heating the oven to 356 degrees. While it’s heating, peel the pumpkin and cut it into cubes. Spread it on the oven tray and add two tablespoons of olive oil and water. Lastly, sprinkle aromatic herbs on the top, according to your taste.

After 20 minutes in the oven, the pumpkin is tender and juicy and ready to accompany any main dish. You can serve it diced, next to the meat or fish, or crush it a little so that it’s more creamy.
