Spanish ratatouille

Ratatouille is a very popular recipe in many countries. This is why you will find so many different versions. In this case, we’ve chosen the version of a typical Spanish ratatouille originating from the region of Castilla la Mancha, in Spain. Locally, this dish is also called, Pisto Manchego. This ratatouille is characterized by eggs and is accompanied by slices of bread.

If you’re looking for a lighter version you can omit these two ingredients and thus make a complete vegetable ratatouille. Take note and make this healthy and delicious recipe.

Ingredients for two people:

  • 2 eggs
  • 1 zucchini
  • 1 red pepper
  • 7.05 ounces of ripe tomatoes
  • Half an onion
  • Olive oil
  • Salt
  • 2 slices of bread

Preparation:

  1. To make the ratatouille, we begin by chopping the onion and putting it in a pan over medium heat with a couple of tablespoons of olive oil.
  2. While the onion is cooking, peel the zucchini and chop it. Peel and clean the red pepper and remove the seeds.
  3. When the onion is half cooked add the zucchini and red pepper.
  4. Grate the tomato or dice it, according to your taste. When the rest of the vegetables are almost cooked, add the tomato. In just a few minutes it will be cooked.
  5. Add salt as necessary.
  6. Cook for 15 minutes over medium heat.
  7. In another pan, heat two tablespoons of oil. When it’s hot, fry the two eggs.
  8. Place the two eggs on top of the ratatouille and at the time of serving, accompany it with a couple of slices of bread.

Spinach stuffed mushrooms

Stuffed mushrooms are a colorful, healthy recipe that everyone loves. It’s typical to fill them with ham, cheese or prawns. We propose a different version loaded with vitamins. It’s about delicious mushrooms stuffed with spinach and nuts.

Ingredients for two people:

  • 400 grams of mushrooms
  • 200 grams of spinach
  • Half an onion
  • 1.77 ounces of cheese
  • Olive oil
  • Salt
  • 6 nuts

Preparation:

  1. Begin by washing the mushrooms and separating the stalks. Chop the stalks, because they’ll be part of the mixture that we’ll fill the mushroom with later.
  2. In a hot pan with two tablespoons of oil, cook the mushroom stalks. Add the chopped onion and a pinch of salt.
  3. Wash the spinach. You can also use frozen spinach, but our recommendation is to use fresh ingredients whenever possible.
  4. Add the spinach and the cheese. Cook for 5 minutes stirring all of the ingredients.
  5. When they are cooked, add the chopped nuts and salt if necessary.
  6. Fill the mushrooms with the mixture. If you want you can sprinkle a little cheese on top of each one.
  7. Place in the oven for 20 minutes at 356 degrees F.

This dish is perfect for a light dinner accompanied by a salad. You can also eat it at noon as a second course. Another option is to cook it for a special day to surprise your guests with different tapas.
