Light pasta salad

Perhaps if you sometimes prepare a pasta dish to take to work, you have been making this in the form of macaroni with tomato sauce? Here, we want to show you another delicious pasta recipe, which you can use to expand the variety of your healthy meals to take to work.

The first thing you should do is to cook the pasta. You must bear in mind that this recipe will produce a generous amount of pasta. Then, add two slices of pineapple cut into small pieces and add a can of tuna (natural, in water).

Cut half a dozen cherry tomatoes into halves and finally, add two spoons of sweet corn. In the end, you will have a complete and low calorie salad, ready to eat at work.

If these ingredients don’t suit your tastes, you can also add chopped lettuce, fresh cheese, olives, cucumber, or crab sticks.

We recommend that when dressing the salad, you should not opt for sauces. By adding a sauce, you’re only adding extra calories and the salad will not be as healthy. The best thing to do, is to add a pinch of salt, and a little olive oil and vinegar.

Prepare this dressing in a separate bowl and add it when you are ready to eat the salad. This way, it will taste better and the pasta and other ingredients, will not be soaked when you eat it.

Quinoa with vegetables

Quinoa is a food that has become quite popular in recent years due to its many properties, making it perfect for preparing healthy meals to take to work. For this recipe, you will be using vegetables, so it will stay juicy to eat the next day.

First, cook the quinoa for 10 minutes. Then, take it off the heat and wash it. It is important to not forget to wash it because that is how you can get rid of the bitterness. Then, leave it resting on a plate.

In a pan, heat a little oil and add the onion and green pepper, that you will have previously chopped. When the vegetables are half done, add the chopped tomato. Finally, add a few nuts, such as walnut or chopped almonds.

Finally, mix some sofrito with the quinoa and some salt. The next day, because of the tomato, the dish will be juicy and pleasant to eat. That is why even if you change an ingredient, you should not do without the tomato, as when you eat a stored meal without tomato, it could otherwise taste dry.

Tomato stuffed with minced meat and vegetables

First, empty out the tomatoes carefully, removing the top part and saving them to use as the lid later on. Store the tomatoes and start to cook the stuffing.

Heat a tablespoon of oil in a pan, along with onion, red pepper, and carrot. When that is done, add some of the tomato pulp that you will have chopped previously. Then, add some minced meat and salt. If you want, you can take this opportunity to sprinkle some spices into the mixture, such as oregano.

When the mixture is ready, stuff the empty tomato with it and cover. Just heating them for a few minutes in the microwave will make them juicy and ready to eat.

If you do not like the idea of eating raw tomato, you can bake it for a while, while you work on the stuffing. Be careful not to overcook it, because then it will be too soft and it will not be possible to stuff with the mixture.
