Ingredients:

  • 7 dried tomatoes (or canned peeled tomatoes)
  • Half of a red pepper, finely chopped
  • Half an onion, finely chopped
  • 2 chopped garlic cloves
  • 2 tablespoons of olive oil
  • Half a cup of white wine
  • Salt to taste
  • A pinch of sugar

Preparation:

  1. If you choose to use fresh tomatoes, you’ll need to cook them first. To do so, you can use two methods. Either grate them and use the pulp, without the seeds. Or alternatively, you can peel them, remove the seeds, and then blend them. If you use canned tomatoes then you’ll only need to mash them.

  4. When the vegetables are almost golden brown, add the tomato pulp with a pinch of sugar.
  5. Mix for a few minutes, then add the white wine and lower the heat to the minimum, until the sauce is reduced.
