Quiche using asparagus

Ingredients for four people:

  • 1 sheet of puff pastry
  • 7 ounces of bacon
  • 12 wild asparagus
  • 4 eggs
  • 7 ounces of grated cheese
  • 5 fluid ounces of cream
  • Salt
  • Olive oil

Preparation:

1. Preheat the oven to 356 degrees.

2. In a round silicone mold, place the layer of puff pastry. Then, using a fork, poke holes over the surface. This way, you’ll prevent the pastry from puffing up too much, although the weight you’ll add on top will only allow the edges to puff up.

3. Place the pastry inside the oven until it’s crisp and golden. For approximately 10 minutes.

4. Wash the asparagus and then chop into pieces, measuring around 3 cm. Next, boil them until they’re soft.

5. Cut the bacon into strips and put it aside on a plate.

6. Beat the eggs in a bowl and add the salt and the cream. Mix everything together until you have a homogeneous paste.

7. Add the bacon to the mixture and pour everything over the mold with the puff pastry.

8. Place the wild asparagus on top. You can also add them to the mix of eggs and cream, just like you did with the eggs. The difference is that this way, it will have a pleasant presentation.

9. Place the quiche in the oven for half an hour. Poke it with a toothpick to check if it’s fully cooked through.

Asparagus with bacon

The asparagus with bacon is a very fast and easy recipe. It’s also a very versatile recipe, because you can use the asparagus as a topping to make ‘tapas‘, a side dish for your meals or a light dinner if you accompany it with a salad.

Ingredients for four people:

  • 12 wild asparagus
  • 12 bacon strips
  • Olive oil

Preparation:

1. Wash the asparagus and wrap a strip of bacon around each of them. If it doesn’t stay in place, you can use a toothpick to hold it together.

2. In a grill or pan add a few drops of olive oil. You don’t need too much, because when the bacon starts to cook it will release some of its own fat.

3. Then, cook the asparagus for a couple of minutes, one minute on each side.

4. They’re ready to serve. Since you can make this recipe in just a few minutes, we recommend that you wrap the bacon beforehand and don’t cook them until you’re ready to serve. This is because they lose some of their flavor when they cool down.

1. Cut the asparagus into 2 cm pieces. If the stem is too hard, discard it.

2. Heat up the broth until it boils. Then add the asparagus so they cook.

3. On the side, peel the onion and the potato and then sauté them with a little oil.

4. Then, add the broth and the asparagus to the onion and the potato and cook everything together for five more minutes, so that both flavors mix.

5. Once that’s ready, add the cream and blend all of the ingredients together.
