Ingredients for two servings: 

  • 150 grams of quinoa
  • 1 tomato
  • Half a cucumber
  • Half a head of lettuce
  • A can of canned mussels
  • Salt
  • Vinegar

Instructions:

  1. Wash the quinoa in order to eliminate the saponin and then cook it for a few minutes. While it cooks, prepare the rest of the salad.
  2. Chop the tomato and cucumber into cubes and toss in a bowl. Then, shred the lettuce and add it to the bowl.
  3. Drain the quinoa to remove all the water and let it cool. When it is cool, pour it into the bowl.
  4. Open the can of mussels and with a fork, add them to the salad. While stirring all the ingredients, pour some of the oil from the can into the bowl.
  5. Finally, add a pinch of salt and vinegar. As the oil from the can has a fairly powerful flavor, just a little salt and vinegar will suffice.

Cucumber and Shrimp Salad

Ingredients for two servings:

  • 2 cucumbers
  • 12 shrimps
  • 4 quail eggs
  • Half a head of lettuce
  • Salt
  • Oil
  • Vinegar

Instructions:

  1. Start by peeling the cucumber and cutting it into very thin slices. If you dislike its bitter taste, you can place it in a strainer and add a little salt. Place a dish under the strainer and when the cucumber has released enough water, you can wash it and add it to the salad.
  2. Set the quail eggs to cook. Once the water starts to boil, they will be ready in less than five minutes.
  3. Peel the shrimp. For this recipe, it will be best to buy them already cooked, so that it will be much easier and less time consuming to prepare.
  4. Wash and shred the lettuce, and place it on the plate. Then, place the cooked eggs, cut in half, around the lettuce, interspersed with the shrimp. In the center, place the cucumber.

  • Half a grapefruit
  • Arugula
  • 6 walnuts
  • Balsamic vinegar

Instructions:

  1. Peel the orange and grapefruit and carefully cut each segment. Leave only the pulp and remove the skin so that eating it is more pleasant.
  2. Place a bed of arugula on the plate.
  3. Distribute the orange and grapefruit segments throughout the plate.
  4. Chop the walnuts in small pieces and add them to the salad as well.
