Discover Three Endive Recipes

Endives are great for salads as they offer a more intense and recognizable flavor than normal lettuce. A versatile vegetable that can be used for complex recipes, we present three delicious endive recipes below.

Cichorium endivia is a flowering plant that originates from the Asteraceae family. It’s cultivated for its bitter leaves that are used in salads and other endive recipes. Furthermore, its root can also stimulate appetites, reduce fevers, and help with stomach ailments.

Endives are widely available during the winter months and they are a very popular vegetable in Spain. In this article, you will discover three endive recipes.

Endive recipes: endive with cheese and anchovies

Ingredients:

  • 8 endives
  • 3.5 ounces of cheese spread
  • 1.7  fluid ounces of cream
  • *Fresh, aromatic herbs

To prepare this dish from our list of endive recipes, follow the steps below:

  • First, wash the endives well and cut them in half, lengthwise.
  • Next, place the cheese spread, cream, and finely chopped aromatic herbs into a bowl, and mix all of the ingredients together. Add salt and pepper to taste.
  • *Aromatic herbs include parsley and oregano. Although you can use other herbs, such as thyme or rosemary.
  • Spread a layer of the mixture over the cut endives. Finally, place an anchovy on top of each endive.
  • You now have a delicious dish to enjoy.

Recipe for cream of endive

Ingredients:

  • 2 endives (sliced)
  • 1 onion
  • 2 garlic cloves
  • 17 fluid ounces of vegetable broth
  • 2 potatoes (peeled)
  • 1 fluid ounce of olive oil
  • A pinch of salt
  • A pinch of pepper
  • ¼ cup of heavy cream

To prepare this dish from our list of endive recipes, follow the steps below:

  • Firstly, put the finely chopped garlic and onion into a frying pan and sauté them until soft.
  • Then, add the sliced endives, (remove and discard the stalks). Cook over a low heat for five minutes and season with salt and pepper.
  • Next, chop the potatoes into small pieces, and add these to the pan, along with the vegetable broth. 
  • Cook over a low heat for 20 minutes and then put the endive cream into a blender, and blend.
  • Return the mixture to the pan and warm it, while adding the cream to make it thicker and creamier. Add, salt and pepper to taste.
  • Finally, serve the endive cream in a bowl, and sprinkle some Parmesan cheese on the top (optional).

Ingredients:

  • 8 endives
  • Half a chicken
  • 1 ounce of manchego cheese
  • 1 pepper
  • half a peeled tomato
  • Water
  • Extra virgin olive oil
  • Vinegar
  • Salt
  • Pepper
  • Parsley 

To prepare this dish from our list of endive recipes, follow the steps below:

  • Firstly, pour the water into a pressure cooker and add the chicken, with a few sprigs of parsley and a pinch of salt.
  • Once cooked, remove the bones and skin from the chicken, and cut the meat into strips.
  • Then, place the meat into a large bowl, and set aside.
  • Cook three of the endives (whole) in a pot with water, and a pinch of salt. Let them warm up enough to cut them in half.
  • Cut another three endives in half and fry these on both sides, in a pan with some oil.
  • Then, finely chop the pepper and tomato and put them in a bowl.
  • Pour in a little oil, and a splash of vinegar, and add salt and pepper. Then, beat well until combined, and slice and add the manchego cheese.
  • Slice the remaining two endives and add all of the ingredients together, with the chicken and mix well.
  • For presentation, serve in a deep dish, with the fried endives at one side, and the cooked endives on another side. Place the chicken, cheese, and raw endives mixture in the middle of the dish.
