Quesadillas are one of the best-known dishes in Mexican cuisine. They consist of wheat tortillas stuffed with cheese and other ingredients. They are such a popular and easy-to-make meal that it’s sold by most street vendors in Mexico. We will now explain how to make this healthy Mexican food, so that you can enjoy a piece of this country in your home.

Quesadillas are wheat tortillas stuffed with cheese or other ingredients.

Ingredients for four people:

  • 8 wheat tortillas
  • 2 chicken breasts
  • 1 1/3 cup of sliced mushrooms
  • Grated cheddar cheese
  • Salt
  • Oil

Preparation:

Firstly, cut both chicken breasts into strips and add a little salt. Make sure you cut the chicken into long, thin strips, so that it’s easier to assemble in the quesadilla.

Then, cut the onion into strips and fry it in a pan, with the mushrooms and a little oil. Finally, add the chicken and cook until it becomes golden brown.

You have prepared the stuffing for the quesadilla. It’s important to wait until you’re about to eat it, before you add the melted cheese, since it’s better when it’s hot. If you’re in a hurry, you can prepare the stuffing in advance. That way, you’ll only have to heat it up when it’s time to eat.

Heat up a frying pan without adding oil and hold a tortilla over it until it’s hot. Then, using a spoon, spread the stuffing over the tortilla. Put the grated cheese and the other tortilla on top. When the upper tortilla is hot, your healthy Mexican food is ready to serve.

Chiles rellenos

Before we begin to explain this recipe’s elaboration, it’s necessary to mention that it’s designed for people who love spicy food. If this isn’t your case, you can modify it and use a different type of pepper. It will no longer be an authentic Mexican recipe, but it means that you can still enjoy this healthy Mexican food.

Ingredients for four people:

  • 4 chili peppers
  • 1/2 lb of shrimp
  • 1/2 lb of squid
  • Half an onion
  • Butter
  • Salt
  • Cheese (optional)

Preparation:

Begin by washing the chili peppers and roasting them. Let them sit for a few minutes so that they’re easier to peel and clean. Once they have no skin or seeds, place them on a plate, so that they can be stuffed later.

Melt a little butter in a pan and cook the onion, shrimp, and squid. Add a little salt. Once they are cooked, you can stuff them in the peppers. Pour a little of the juice that’s left in the pan, on top of the filling.

Lastly, sprinkle some cheese and broil in the oven for five minutes. Remove the chili peppers from the oven when the cheese is golden brown.

Guacamole

Guacamole is a Mexican dip that has become popular all over the world due to its versatility. It’s easy to prepare, very tasty, and it’s also the perfect companion for many meals. Here’s how to make a light version.

Start by chopping the onion and set it aside in a bowl. Cut the avocados in half, discard the stone and remove the pulp with the help of a spoon. Place the pulp in the bowl with the onion. Mix both ingredients well, so that they are as crushed as possible.

Then add some lemon juice, chopped cilantro, and salt. Just a drizzle of lemon juice will be enough. Stir the mixture and it is ready to serve.

If you don’t like the resulting texture, you can pass it through the blender or mash it a little with a fork.

Once you have made the dip, you can use it to make:
