It’s a favourite ingredient in many dishes, but we should avoid using cheese liberally, unless we choose low sodium and low-fat options. In this article we will give you some healthy recipes with cheese, so that you can enjoy them at lunch or dinner. They are all delicious!

Easy recipes with cheese

If you are dieting to lose weight you can choose reduced fat and low sodium cheese to use in different recipes. This very complete food gives us calcium, proteins, and vitamins. It’s also delicious and improves the flavor of most meals! Some recipes that we can make with cheese are:

1. Pasta with cheese, spinach, and artichokes

Pasta with cheese is a classic favorite, but sometimes it can become boring and we might look for ways to consume more vegetables. With this recipe, we can let our imaginations fly, and add the ingredients that we like the most.

In this instance, a delicious sauté of garlic, onions, artichokes and chopped spinach can be added to pasta. Then, add a cup of grated cheese, another cup of mozzarella cheese, and a third cup of cream cheese. Prepare the pasta according to the package directions, strain the water and mix with the above ingredients.

Pour the mixture into a baking dish, greased with butter and cook for about 30 minutes, until the cheese melts.

2. Potato cake with cheese

This dish is very easy to make and will become your favorite option when you don’t have much free time to prepare meals. You can enjoy it both cold and hot, as a starter, or as a main dish.

Wash and peel about four potatoes, cut them into cubes and cook them in water, with salt. Chop an onion and sauté with butter and olive oil. Strain the potatoes and mash them. Cut cubes of ham and add to the mixture. Then add a few tablespoons of cream cheese. Season as desired.

Pour the preparation into a baking dish and cook for 10 minutes. Sprinkle with oregano before serving. It’s one of the richest cheese recipes that you have ever tasted.

3. Tomato and cheese soup

Chop an onion and sauté with olive oil. Season with pepper, oregano, and thyme. Then add a can of tomato puree and cook. Add basil, parsley and a pinch of sugar. Chop two tomatoes and add these to the preparation. Cook over a low heat, adding water from time to time.

Sprinkle grated cheese and puree the mixture in the blender, to obtain a thick and creamy soup.

4. Zucchini and cheese rolls

This recipe is ideal for avoiding the unhealthy snacks that we usually eat when we return home hungry, from work or the gym. It can be prepared in a few minutes and it is a delicious and healthy appetizer.

Cut two zucchini into strips, and cook in water, with salt for two minutes. Drain and put in cold water to finish the cooking process. Mix one cup of cream cheese with evaporated milk and condiments of your choice.

Place a spoonful of the mixture on each zucchini slice and roll it up. Arrange on a tray and prepare a dressing with a spoonful of honey, one spoon of vinegar and one spoon of olive oil. Sprinkle over the zucchini… And it’s time to eat!

5. Toast with cheese, tomato, and onion

The last of the recipes on this list with cheese, is perfect for an entree and you can use whatever type of bread you prefer: white, whole grain, with seeds, etc. Cut the bread into slices and finely chop an onion and cook in a pan with olive oil. Add vinegar and brown sugar to caramelize.

Cut sliced tomato and cheese into small pieces. To serve the dish: on top of the toast, place one or two slices of tomato, then add the cheese, caramelized onions, and some arugula leaves. You can sprinkle this dish with olive oil if you prefer.
