Quinoa is mainly grown in the Cordillera region of the Andes. Nowadays, however, quinoa can be found all over the world. It’s the only food of vegetable origin that contains all of the trace elements, essential amino acids, and vitamins. In this article, we’ll share some different quinoa recipes that you can prepare at home.

Quinoa recipes: quinoa with vegetables and egg flower

Ingredients (for four people):

  • 9 ounces of quinoa
  • Eight bell peppers
  • One garlic clove
  • Four eggs
  • Eight green asparagus
  • Two carrots
  • One parsnip
  • One turnip
  • Extra virgin olive oil
  • Salt
  • Parsley

Preparation

First, chop the asparagus into pieces (about two centimeters wide). Peel the carrots and slice them into thin slices. Cut the parsnips and then peel the turnip and cut it into cubes.

The next step is to fry all of the above-mentioned ingredients with a little oil and salt. Next, peel the garlic and cut it into little pieces and then add to the frying pan with the chopped bell peppers. Cook over low heat for approximately ten minutes and then add a little water. After the mix has cooled, blend it.

Quinoa recipe

Put the quinoa in a colander and rinse with cold water. Add it to the vegetables with a little water and cook over low heat for 20 minutes.

Boil the eggs until they’re ready and finally the dish is ready to serve. Place the quinoa on the plate and then add a spoonful of the blended sauce and place the boiled eggs on top. You can also decide to decorate this meal with some parsley.

Quinoa soup with vegetables and diced bacon

Ingredients (for 6 people):

  • 3.5 ounces of quinoa
  • 3.5 ounces of bacon
  • Chives
  • A leek
  • One turnip
  • 9 ounces of pumpkin
  • 6 cabbage leaves
  • Two garlic cloves
  • 3.5 ounces of spinach
  • Extra virgin olive oil
  • Salt

Preparation: 

Start by peeling the garlic, onion, turnip, and pumpkin. Wash the cabbage and spinach, prepare the leek by peeling off the top layer.

Next, chop all of the vegetables into small pieces and fry them in a casserole with a little oil and salt. Chop the bacon into small cubes and fry for a few minutes before adding approximately 2 liters of water.

Finally, wash the quinoa and then fry it in a pan, this time without any oil. Next, add it to the soup, place the lid on and cook all of the ingredients together for 20 minutes. After 20 minutes the dish is ready to serve.

Quinoa recipes: mixed salad and quinoa

Ingredients:

  • 9 ounces of lettuce
  • Four radishes
  • 3.5 ounces of quinoa
  • Extra virgin olive oil
  • Vinegar
  • Salt
Quinoa salad

Preparation:

This final recipe is very simple to prepare. Firstly, wash the lettuce and dry. Next, chop the lettuce and place the pieces in a dish. Place the quinoa in a colander and rinse with cold water.

Cook in a saucepan with water and a little salt. Let it boil until the water evaporates, then let it cool.

Wash the radishes, chop them into cubes and add them to the dish. You can season the dish to your liking and then it is ready to serve.
