  • 1 bar of almond nougat, chopped
  • 2 egg yolks
  • 3.5 ounces of white sugar (or stevia)
  • 13.5 fluid ounces of heavy cream
  • 8.5 fluid ounces of whole milk
  • Lemon zest
  • 1 cinnamon stick

Preparation:

  1. Firstly, heat the milk. Once it’s hot (but not boiling), add the lemon zest and the cinnamon stick. Be careful when grating the lemon and avoid the white part. This will make the milk bitter.
  2. Cook over a low heat for five minutes and let it sit.
  3. Once the milk has settled, add the cream and put the pot back over the heat. It doesn’t have to come to a boil.
  4. Then, in a bowl, add the egg yolks and sugar, and mix.
  5. Add the almond nougat until it dissolves with the eggs and sugar.
  6. Once the mixture has combined, add it to the pot with the milk and cream.
  7. Let cook for five minutes, without coming to a boil.
