Eggs are a very nutritious food that shouldn’t be excluded from our daily diet. The yolk contains a high amount of vitamins, minerals, healthy fats and protein. Hard-boiled egg salad

In this first recipe we’ll show you that you don’t have to spend hours in the kitchen to cook eggs. We’re going to make a salad that’s perfect for those days when we’re in a hurry and don’t feel like cooking.

Ingredients for two people:

  • A lettuce head
  • Three tomatoes
  • Two hard boiled eggs
  • Half a cucumber
  • A tin of sardines
  • Pumpkin seeds
  • Vinegar
  • Salt

Preparation:

Start by boiling some water in a saucepan. You don’t need to boil too much water, just enough to cover the two eggs. Once the water is boiling, add the eggs and let them boil for 10 minutes.

In the meantime, wash the lettuce, the tomatoes and the cucumber. Chop the tomato and lettuce and put them on to a plate. Place the cucumber, with a pinch of salt into a drainer and put a plate underneath it. Wait for a few minutes and when you see a puddle of water forming on the plate, rinse the cucumber and add it to the plate with the lettuce and the tomatoes.

Then, open the tin of sardines, cut each sardine into two or three pieces and place them on the plate with the rest of the ingredients. Save the oil from the tin. Finally, peel the eggs and let them cool down. Chop them and add them to the plate along with the pumpkin seeds.

For the dressing, pour some of the sardine oil and add a pinch of salt and some vinegar to taste. That’s how easy it is to make this dish!

Ranch style eggs

Ranch style eggs, or huevos rancheros, are a traditional Mexican recipe. They used to be a typical lunch for farm workers. Over the years, they have become very popular and people all around the world now enjoy them too.

Ingredients for four people:

  • 4 corn tortillas
  • 4 eggs
  • 4 tomatoes
  • Half an onion
  • 1 green pepper
  • Salt
  • Onion
  • Olive oil

Preparation:

Start by making a stir-fry with the tomatoes, the green peppers and the onion. Chop all of the ingredients and fry them in a pan with a little bit of olive oil. When they’re cooked, set them aside on a plate. If you want to give the dish an authentic Mexican touch, add a dash of hot sauce to the mixture.

In a different pan, fry the tortillas for one minute on each side. Fry them one at a time in the pan and place them on to a plate. Finally, you just need to fry the eggs with some oil and salt. Once you have all of the ingredients, put two tablespoons of the tomato sauce and a fried egg on top of each tortilla. You can now enjoy an authentic Mexican dish.

Stuffed eggs

Stuffed eggs are one of the most traditional recipes in Spanish cuisine. Whether it’s a family meal, a dinner with friends or time for tapas, they’re a very popular and easy meal. There are many ways to make them, although the traditional ones are made with tuna. However, we’re proposing a different recipe: shrimp stuffed eggs.

Ingredients:

  • Three hard boiled eggs
  • 6 crab sticks
  • 12 shrimp
  • Mayonnaise

Preparation:

Start by boiling water in a saucepan. When the water boils, put the eggs in and let them cook for 10 minutes. Move them gently in the pan from time to time during the cooking process, so that the yolk stays in the center. This will make it easier to stuff them later.

While the eggs are cooking, shred the crab sticks and cut six shrimp into pieces. Once the eggs are cooked, peel them carefully so they don’t break. Cut them in half, and remove the yolks. Put the egg whites aside and mash the yolks. Mix them with the crab and shrimp.

Add the mayonnaise to the mixture to form a paste. Stuff the eggs with this mixture using a spoon. To decorate them, place a shrimp on top of each egg.
