Ingredients

  • Three egg yolks
  • One egg white
  • One tablespoon of mustard
  • One tablespoon of capers
  • Extra-virgin olive oil
  • Tarragon vinegar
  • Salt

Preparation

  1. Take three eggs and separate the yolks.
  2. Then, place the yolks in a mixer.
  3. Add a pinch of salt and a splash of olive oil.
  4. Next, mix everything together, gradually adding olive oil until you’re left with a white cream.
  5. Transfer the contents to a bowl and add a tablespoon of mustard and a splash of tarragon vinegar.
  6. Chop the capers and add them to the bowl.
  7. Then, separate one egg white and beat it until stiff, before adding it to the bowl.
  8. Finally, mix everything well and put it in a sauce boat.

How to make tarragon vinegar

Ingredients

  • Two cups of fresh tarragon leaves
  • Two cups of white vinegar

Preparation

  1. Crush the tarragon leaves to amplify their aroma.
  2. Then, put the leaves in a container.
  3. Add the white vinegar to the container.
  4. Next, cover the container and leave it for two to three weeks, allowing the flavor of the tarragon to mix with the vinegar.
  5. Finally, put the tarragon vinegar in a bottle and add an extra sprig of tarragon.

Recipe for baked chicken with mustard sauce

The ingredients required for this recipe are as follows:

  • One whole chicken
  • Half an onion
  • Two cloves of garlic
  • One leek
  • Half a lemon
  • Broth
  • Half a cup of white wine
  • Salt
  • One tablespoon of mustard

  1. Place the chicken on a baking tray. Squeeze the lemon juice on the chicken and place the lemon inside the chicken.
  2. Then, cover it with a glass of white wine, a splash of oil, and salt to taste.
  3. Next, place the vegetables around the chicken and add the broth.
  4. After pre-heating the oven, add a mix of spices to the chicken and put it in the oven at 374 degrees for approximately 75 minutes. Turn the chicken over several times during baking.
  5. When it’s cooked on both sides, remove it from the oven and chop it up. Finally, add the previously-made mustard sauce.
