Five of the best healthy pancake recipes

1. Oat, banana and cranberry pancakes

This recipe is perfect for starting the day off with energy. It includes everything that you need for a complete breakfast, that’s full of flavor but, most importantly, healthy.

The ingredients that you’ll need are:

  • 7 ounces of oats
  • 9 ounces of natural yogurt
  • 1 medium banana
  • 2 egg whites
  • Lemon zest
  • 1/4 teaspoon of vanilla
  • 1 tablespoon of honey
  • A pinch of cinnamon

Making them is easy. Just mix the yogurt, honey, lemon zest and cinnamon together. In a different bowl, mash the banana and add it to the yogurt mixture, along with the egg whites. Stir everything together with a wooden spoon. Then, ladle some of the mixture into a hot frying pan and wait until they’re golden-brown, before flipping them.

2. Express pancake

This is such an easy and quick recipe to make. There are only three ingredients:

  • 0.5 ounces of flour
  • 2 egg whites or 1 whole egg
  • Chocolate syrup

In a food processor, mix the flour with the egg whites. Next, spoon some of the pancake batter into a hot frying pan, with a little oil to prevent sticking. Flip the pancake and wait for it to turn golden-brown and you’re done. When you plate your pancake, drizzle on some chocolate syrup for extra flavor.

3. Zucchini pancakes

Zucchinis are one of the most flavorful vegetables around. However, we’re giving them a special mention in our recipe. This one’s great for a healthy breakfast, but you could also eat it as a side dish, snack or have it for dinner.

These pancakes only contain 65 calories per serving, making them a perfect component for a well-balanced breakfast.

The ingredients include:

  • 2 generous tablespoons of all-purpose flour
  • 1 medium zucchini
  • A small egg
  • Cornstarch
  • 1 teaspoon of baking powder
  • 1/4 cup of grated light cheese
  • A garlic clove
  • 1 tablespoon of basil.

Firstly, wash the zucchini and grate it, (leaving the skin-on), into a bowl. Add a pinch of salt. After, move it to a bowl and add the egg, flour, grated cheese, basil, and minced garlic, along with the teaspoon of baking powder.

Mix everything together and spoon out a little mixture into a frying pan that you’ve previously coated with oil. Wait until they are golden brown. Enjoy!

4. Vegan pancakes

This recipe is absolutely scrumptious and perfect to make when you’re low on the main ingredient for pancakes: eggs.

This recipe uses the following ingredients:

  • 1 ounce of all-purpose flour or oat flour,
  • A ripe banana
  • 1 teaspoon of yeast
  • 1 tablespoon of oil
  • Some stock or non-dairy milk.

In a food processor, mix all of the ingredients together, except for the stock. Then, slowly pour the stock into the batter. Next, spoon the batter into a frying pan, that has previously been coated with a drizzle of oil.

Brown both sides of the pancake and it’s ready! Before serving, you can drizzle over a little honey or syrup, or you can add some chopped fruits.

5. Three-ingredient pancakes

This recipe is great for when you want to make a nutritious breakfast in a hurry.

You only need three ingredients:

  • A ripe banana
  • 2 eggs
  • Sunflower seed oil

Mash the banana and mix it well with the eggs. Spoon portions into a frying pan, that’s previously been coated with sunflower seed oil. Cook them on each side.
