  • 1 liter of chicken broth
  • 250 grams of peeled chestnuts

Start by hydrating the mushrooms and putting them into a colander under running cold water. Clean the mushrooms and place them in warm water for 20 to 30 minutes. Next, cut the mushrooms and ham into small pieces.

Pour the chicken broth and chestnuts into a pot and let them cook over medium heat until soft. Next, remove some chestnuts. The remaining chestnuts should be left in the broth and blended until reaching the desired consistency.

Add some pepper and the mushrooms and then place the mixture over lower heat for a while longer. Add a little of the ham and then remove the dish from the heat. Finally add the chestnuts that you removed previously. You can use chives to decorate and give the dish a more attractive presentation.

Turkey with wine and chestnuts: a Christmas recipe

Ingredients:

  • 1 kilogram of turkey thighs
  • Half a liter of white wine
  • 1 onion
  • 3 garlic cloves
  • Chestnuts
  • Aromatic herbs
  • Butter
  • Flour
  • Olive oil
  • Pepper and salt

Preparation:

Start by peeling the chestnuts, the onions, and the garlic.

In a pot, pour in the water and wine. Add the aromatic herbs and a little cinnamon and place over medium heat.

Meanwhile, brown the turkey thighs in a pan with olive oil. When ready, place the turkey in the pot with the wine and water. Save a little of this broth for later.

In another pan saute the onion and garlic with two tablespoons of butter. Add three tablespoons of flour and the chestnuts. Cook for a few minutes and add the broth that you saved.

Stir the mixture well to prevent lumps and add a cup of liquid from the wine and water mixture in which you placed the turkey. Cook for a few minutes and finally pour this mixture in the pot that contains the turkey. Mix everything well and cook until the turkey becomes tender.

Let the turkey rest for 10 minutes before serving the meal. This will help it absorb the flavor of all of the ingredients. This is a recipe is especially recommended for during the Christmas holidays.

Chestnut pudding

Ingredients

  • Half a kilogram of chestnuts
  • 750 milliliters of whole milk
  • 4 eggs
  • 60 grams of butter
  • 80 grams of sugar
  • Vanilla

Preparation:

First, boil the chestnuts in water for 10 minutes, drain, peel and then chop into pieces. Next put them in a pot with milk, butter, sugar and a teaspoon of vanilla essence. Cook for a least one hour over low heat while stirring.

Next, let cool and then blend until the product reaches a creamy consistency. Add the egg yolks and mix well before adding the egg whites. Continue beating the eggs until they become fluffy.

Pour the mixture into a baking dish that was previously coated with a little butter. Bake in a bain-marie at 180 degrees. When the pudding is set, remove it from the oven and let it cool. You can accompany the pudding with custard or cream in order to make this dessert even more exquisite.
