When we think of avocados, we most commonly associate them with guacamole, the typical Mexican dish. However, there are thousands of delicious avocado recipes that you can make to enjoy this rich taste and texture. In this article, we will share a few of those recipes.

Avocados are an excellent replacement for certain dressings, such as mayonnaise and they provide many essential oils. This fruit, dark on the outside and bright green on the inside, can be used in many different recipes. Check out the following delicious avocado recipes:

1. Avocado Pastries

This recipe is very easy to prepare, is suitable for vegetarians, and works well as an appetizer. You will need puff pastry sheets cut into circles (you can use the lid of a jar or cup), a couple of avocados, lemon juice, mozzarella cheese, and tomato sauce.

Place the flesh of the avocados in a bowl, along with juices and spices that you like the most, and make a puree. Cut the cheese into cubes and prepare the sauce (it must be cold). Take a circle of puff pastry and in the center place a spoonful of avocado puree, a cube of cheese, and a teaspoon of tomato sauce. Close it by placing another circle on top and seal the edges with the fork.

Beat an egg and brush the pastry before placing it on a baking dish. Cook it for 25 minutes or until golden brown.

2. Avocado and Shrimp Purée

The second of our delicious avocado recipes can be prepared in just a few minutes and serves as an appetizer, or as a quick bite. You will need an avocado, a cup of milk, a lime (or lemon), half a kilo of shrimp, and sugar.

Remove the flesh from the avocado and squeeze the juice from the lime. Mix them together along with the milk and sugar in a blender, to form a liquid purée. Steam the shrimp. To serve, put the purée in the dish first, then top it off with a pair of shrimp. 

3. Cold Chicken and Guacamole Soup

When summer comes and you no longer know what to eat and cooking can make your kitchen hot, this cold soup is perfect. You need an onion, two cloves of garlic, two cups of chicken broth, an avocado, a lime, olive oil, salt and spices.

Chop the garlic and onion, and sauté them with oil. Take them off the heat and add the chicken broth, chopped avocado, and lime juice. Mix together in the blender to form a cream. Season it according to your tastes. Put it in the fridge and store it until serving time.

4. Avocado and Tomato Quesadillas

Are you at a loss for what to prepare for lunch or for a get together? Then these quesadillas are perfect for you. You will need a couple of avocados, corn tortillas, grated cheese, dried tomatoes, and condiments.

They are so quick and easy to make! Remove the flesh from the avocados and press it with a fork to make a purée. Heat a corn tortilla and top it with a handful of grated cheese, two tablespoons of the avocado purée, some dried tomatoes, salt, pepper, and then add another layer of grated cheese. Close it with another tortilla and cook it over low heat. Repeat with each tortilla and eat them while they are hot.

5. Avocado, Shrimp, and Tomato Salad

Another one of the delicious avocado recipes that you can enjoy is this very fresh, colorful and healthy salad. It is especially ideal if you are on a diet!

You will need: one avocado, one egg, one purple onion, lamb’s lettuce, half a cup of peeled shrimp, one tomato, seeded bread (for example quinoa, amaranth, sesame), salt, and olive oil.

Cook the egg (in water) to make it hard, chop both the avocado and the tomato into slices or small cubes. Julienne the onion and prepare the shrimp. In a bowl, place the lamb’s lettuce, the chopped egg, the avocado, the tomato, the onion and the shrimp. Dress the salad with salt and olive oil. Serve with one slice of bread per guest.
